Named for the Dominion of Canada and confederation — the idea of ‘Unity in a Community of Nations’ — that we now celebrate as Canada Day, Dominion drew inspiration from the idea of cultural unity to create a menu of ‘New Canadian’ cuisine that embraces inclusivity, share plates, and dishes influenced by diverse cultures across the region.
Executive Chef Brad Green has created recipes centred around this theme, with items that are classically Canadian, with an unexpected cultural twist, like signature dishes the Dominion Bao Mac, a mini cheeseburger in a Chinese-style open-side bun and the Jäger Chicken, marinated in Jägermeister and served with German spaetzle noodle dumplings.
Under the guidance of consulting mixologist Shaun Layton, the in-house bar team led by Jas Bains has put together an exciting selection of classic cocktails, craft beer and VQA wine. Dominion’s craft beer selection focuses on local breweries across Metro Vancouver, such as Four Winds, Steel and Oak, and Parallel 49, and the menu has local BC wine favourites, Burrowing Owl, Joie Farm, and Nichol Vineyard, from the Okanagan Valley.
Led by General Manager Darren Pierce, Dominion will bring social atmosphere, innovative design, and local comfort to Surrey’s emerging downtown. Dominion will transport guests into an experience designed to be contemporary, eclectic and modern, with a focus on quality and connection. Unrivalled in the area, Dominion’s interior design is a mix of intricate industrial lighting, bold furniture, striking colours, and is the perfect gathering place to meet friends and checkout local DJs, comedians and live evening entertainment.
